Julien Guilbert Before coming to work at La Verrière, Julien worked as a chef in restaurants across Bordeaux and Provence. His artistry and cooking are international and borderless, drawing flavors from the season and environment. Julien has also dedicated a part of his career to teaching less-advantaged students in Marseille how to cook. He forages ingredients, builds relationships with producers, and has developed a cuisine that is imaginative, contrasting and flavorfully alive.
